Echinoderms (Echinodermata) is a type of marine invertebrates. They appeared on Earth 450 million years ago. Scientists have 6,000 species of these marine creatures, many of which are completely different from each other in appearance or body length, which varies from a few millimeters to 5 meters.

They were united into one large family according to three general characteristics: it is a radiant structure, a highly developed skeleton and a unique ambulacral (aquifer) system of channels filled with liquid, it combines the functions of movement and touch and can perform the function of breathing.

Echinoderms have many interesting anatomical features, for example, they do not have blood vessels, and the blood moves in the lumen of the connective tissue.

All echinoderms can live only in highly saline water, in the Caspian and Baltic seas they are not.

Echinoderms are divided into 5 classes: sea urchins, holothurians, starfish, sea lilies, ofiury.

From this list, the greatest practical benefit people have long been extracted from sea urchins and holothurians.

Holothurians

Holothurians are called sea cucumbers or cucumbers, due to the fact that at the slightest touch they shrink and become similar in shape to cucumbers. They live on the bottom, move, contracting muscles and helping themselves with tentacles.

If the holoturia is cut into several parts and thrown into the water, then after some time several full-fledged creatures will recover from these parts.

True, they will be much smaller than the „parent“, so do not hope for such a cheap way of breeding sea cucumbers!

The most famous representative of the class of sea cucumbers is the trepang, which has been known since ancient times in the coastal countries of Southeast Asia both as a delicacy and as a remedy for many diseases.

Kukumor are less known – large, up to 40 cm in length, holothurians.

Cucumaria japonica ( Cucumaria japonica ) is found in the Far East  From it you can cook a lot of tasty and healthy dishes, in addition, as part of cuckuria found a whole range of useful substances for healing the body.

They are very fond of the meat of this invertebrate in Japan, where a huge number of cucumberia recipes are collected. It is used in fried, stewed, boiled, baked, dried and preserved. Various extracts and extracts which are a part of many medicines are made from cucumaria in Japan.

Cucumber dishes

In our Far Eastern regions, you can buy ready-made canned cucumber. Many recipes for canning cucumberies and other marine products, which preserve their beneficial properties to the maximum, have been developed by TINRO (Pacific Fisheries Research Center) specialists.

In Japan, cucumaria is often served raw with vinegar and shredded daikon radish.

In China, stewed Kukumriya with pork or chicken.

Boil raw frozen Cockworms need a long time, 2-4 hours.

Cucumber salad

cucumaria, Bulgarian pepper, carrots, vegetable oil, spices.

Cooked soybeans with soy sauce
Cooked cucumberry, cut into strips and simmer until cooked, lightly salted. Fry onions with carrots, add chopped cucumber, fry and season with soy sauce and spices, you can add a clove of garlic to taste.
Skoblyanka with meat
Fry the onions, add a portion of boiled cuckourie, cut into strips, add a spoonful of flour, tomato paste, mix well and heat. Put meat prepared with cucumberia with flour and tomato in a saucepan, pour a glass of broth, boil for 5 minutes, add pepper, finely chopped garlic, close the lid and leave on the stove for half an hour. When serving, you can decorate with lemon.
Kukumriya Pilaf
A traditional pilau recipe is used, only kukumriya is put in place of meat.
Cook with
cabbage, carrots, greens, beans, onions, add boiled chopped cucumber, tomato paste, salt and spices to taste, simmer on low heat for 20-25 minutes.
Instead of beans, you can add ready-made pork or beef, but not more in quantity than cucumaria itself.
You can make cabbage rolls with kukumori mince.

Medicinal properties of cucumaria

Cucumaria contains calcium, phosphorus, vitamins C, P, PP group B, hexosamines – substances necessary to strengthen the nervous and cardiovascular systems and to treat diseases of the thyroid gland. It strengthens the immune system. Cucumaria extract is effective for diabetes, respiratory system diseases. Cucumaria contains lipids and phospholipids (from 44 to 53%), updating liver cells and preventing its dystrophic changes.

A very valuable raw material for the production of drugs and BAL are gonads (sex glands) of cucumaria. In the lipids of cucumaria gonad, a high content of polyunsaturated fatty acids (FML), especially fatty acids of the omega-3 family.

Triterpene glycosides

The cucumorium triterpene glycosides (saponins, cucumariosides, goloturiny) block the reproduction of harmful fungal and yeast microflora. They stimulate sexual function, reduce the growth of tumor cells.

An interesting history of the discovery of glycosides. Residents of the islands of the Indian and Pacific Oceans have long been aware of the toxicity of holothurians for fish and used them to kill fish in the inland waters of coral atolls and their subsequent consumption. With prolonged cooking, these toxins are neutralized and not dangerous to humans.

In 1952, American scientist Nigrelli identified and named goloturinom active substance from the glands of one species of sea cucumbers Actinopyga agassizi.

Soon, toxins were found in 30 types of sea cucumbers. Currently, the number of species in which these toxins are found exceeds 50. A chemical study of holothurian toxins has established that they belong to triterpene glycosides . Moreover, similar compounds were not found in other groups of animals.

Dr. Nigrelli also discovered the antitumor effect of glycoside holothurians. He found that subcutaneous injections of a solution of holoturin (fraction of triterpene glycosides) in the area of tumor sarcoma growth inhibit tumor growth. Goloturin, according to Nigrelli, inhibits the growth of epidermal carcinoma tumor cells.

In the Soviet Union, successful studies were conducted on the anticancer activity of a semi-finished cucumber product in medical institutions and at the Institute of Nutrition of the Academy of Sciences of the USSR.

At present, scientists of Russian Far Eastern scientific centers are also actively researching and using biologically active substances isolated from cucumaria.

Kukumaria is a part of the product EKSTRA SNAGA to increase potency, increase immunity and strengthen the body.
